Introducing our rewards: AUTUMN (wild soul food)
Who does not know the expression: "Love goes through the stomach first"?!
The people from Posaga, the village-community where our Dupa Gard Bio Retreat is based, most certainly know this too well. We learnt it too with time: we first started planting all organic and respecting the rules of biodynamic agriculture so we can be ~ even if only partially~ self sustainable and aware of what we eat.
Then we have been buying the missing ingredients from the locals. For instance: every Sunday, another woman from the village bakes the bread & various pies in her own wooden oven. There is the village butcher so any meat would be fresh.
Then, one should be aware that the ingredients vary from season to season. For instance, in May/June, and only then, we produce elderflower-lemonade (takes 2-3 days to make it as the flowers first slowly ferment into water).
Not to forget Ioana's mother who has been, in the last 5 years, each project's cook :) She cooks slowly and a "modest" meal would be made of appetizers, soup, main dish & dessert! Not to mention that she also creates her own recipes- for instance, the dandelion soup or the nettle cream soup. So, yes! we do have vegetarian menus!
Our favourite food is ~ by far ~ the folded polenta made from Ioana's grandparents corn-bean (cultivated in the family in the last 50 years or so). So: you have 1 layer of polenta, 1 of fresh cheese, again polenta, then buffalo butter melted into cream layer, then polenta again. Yammy!
Of course, for all of our guests that cannot make it to us (yet) but want a taste of the local food goodies we created this THANK YOU. It will not disappoint you, trust us!
